How to AVOID passport getting stamped?

I have an Australian passport, and I spent exactly 90 days in Poland
(after it became a Schengen country), and then came to England. My
employers in Poland have been trying to organise the required documents
for a business visa, and it is taking a lot longer than we hoped. I
need to return to Poland NOW for a couple of months until my visa
documents are ready, but because I already used my 90 Schengen days, I
know it will be a problem.

I have a couple of questions. Is the
only way anyone can tell how long I have been in the schengen union by
the stamps in my passport? Or is it recoreded electronically? (I know
when I entered and left Poland at the airport they scanned my passport,
but I'm not sure what this is for...?)  And so if I can somehow
get back into the Schengen union without my passport being stamped,
would that be good enough? And the obvious question: does anyone know
how I could from England to France, without being stamped? I'm
wondering about the Dover-Calais ferry...
